15 Minute Paleo Pulled Pork with Chipotle Lime Coleslaw

Easy weeknight meals are essential at our house. 

Even more important, healthy weeknight meals. 

Our family love BBQ and makes a point to hit up every BBQ joint we see when traveling. The only problem with making BBQ at home is time. No one has time to go to work and spend the entire day smoking meat. 

Which brings me to discovery number 1: Sam’s Club brand Pulled Pork

The best thing about this pork, aside from the flavor, is that it’s healthy. Yes, the ingredients are short and all fit Paleo, Primal, Keto … you name it. It’s just seasoned pork. No junk added. 

Now I usually top my pulled pork with my favorite Paleo BBQ Sauce recipe from Against All Grain, but on nights when I don’t have time I just sub in some sugar free BBQ sauce I can find at the store. My husband always uses Sweet Baby Ray’s. 

Next up, your coleslaw just got easier. I don’t often buy mayo (I usually make my own), but Primal Kitchen’s is Paleo / Primal / Keto & just plain good for you with zero junk on their ingredients list as well. 

Playing in the kitchen last night and trying to figure out what to do about the coleslaw brought me to my bottle of Primal Kitchen. I wasn’t in the mood for my usual coleslaw at all. We needed something new. 

To serve I set out the pulled pork, coleslaw, and BBQ sauce options on the counter and let everyone fix their plates. You could also serve this with a side of fruit or on a burger bun. You could even add BBQ beans and peach cobbler for a real BBQ experience. 

This is one of the few meals that I can pull mainly off the shelf that requires no chopping and is actually good for my family. Surprising, pre-made pulled pork, mayo, BBQ sauce, and a bag of pre-chopped cabbage make for a easy healthy weeknight meal.

  1. 16 oz Tri-color Coleslaw
  2. 1/2 to 3/4 cup Primal Kitchen Chipotle Lime Mayo
  3. lime, juiced
  4. 1/2 tbsp coconut palm sugar
  5. salt & pepper to taste
  1. In a large bowl combine 3/4 cup of Chipotle Lime Mayo with one juiced lime and coconut palm sugar. Stir into shredded coleslaw. Season with salt and pepper to taste. Serve.
  1. I used Marketside Tri-Color Coleslaw from Wal-Mart. If you are following Keto just leave the palm sugar out. Also, start out with 1/2 cup of mayo and see if you need more.
