Summer is now in full swing and for this mom, registered dietitian and foodie, it also means a chance to explore new recipes with the my favorite summer produce. I have compiled an easy list of some my favorite, DIY, kid and Eat Fit approved summer treats.
Fruit Smoothie Popsicles
Blend together 1 cup plain Greek yogurt with ½ cup frozen cherries, ½ cup milk, 1 tsp honey and place in popsicle mold or cups with popsicle sticks. Freeze overnight and serve the next day!
Frozen Yogurt Berry Bites
This one is super easy to make, and the kids have a lot of fun making it.
- Fresh berries (we love blueberries, but you can use whatever is on hand)
- Plain yogurt (I like the Greek yogurt because it is higher in protein, but you can use whatever you like)
- Cookie sheet
- Wax paper
First, place the wax paper on cookie sheet. Then let your kids take over by dipping their fruit into the yogurt, making sure it is nice and coated with yogurt and then placing on wax paper. Place in freezer overnight and enjoy!
Frozen Banana “Ice Cream”
Using a machine like the Yonana, you can get creative with a variety of frozen fruit treats. Don’t want to invest in anymore kitchen equipment? Mash bananas in a small cup, add in slivered almonds or cocoa nibs and put in the freezer for 60 minutes. This one can be really fun and the possibilities are endless, get creative and have fun!
Let your kids explore different flavors and textures by making their own fruit kabobs. Here are just a few ideas to get started:
- Pineapple, peeled and diced
- Kiwi, peeled and sliced
- Strawberries, with the stem removed
- Mangoes, peeled and diced
- Wooden skewers
